Mushrooms 'fish and chips style' with posh vinegar

Irresistible crispy fried mushrooms perfect for entertaining guests
Ingredients:
  • 4 sprigs fresh tarragon
  • 2 sprigs fresh thyme
  • 6 white peppercorns
  • 2 cloves garlic peeled and finely sliced
  • 400 ml white wine vinegar
  • 1 litre olive oil
  • 100 g plain flour
  • 1 lemon zest of
  • 4 large handfuls mixed mushrooms (porcini, field, girolles and morels)
  • 1 small bunch fresh flat-leaf parsley
Instructions:
  • Prepare the flavored vinegar by combining tarragon, thyme, peppercorns, and garlic in a bottle, then topping with vinegar. Allow it to steep for at least a few hours, or up to a couple of weeks for maximum flavor. Strain and store for later use. Heat olive oil in a deep pan. Coat torn mushrooms in seasoned flour and deep-fry in batches until golden brown, approximately 3-4 minutes. Drain on paper towels and serve with a sprinkle of salt, flavored vinegar, and chopped parsley. Enjoy!
