Delectable seafood platter you can't resist!
Ingredients:
  • 4 Lobster Tails
  • 40g butter, chopped
  • 12 Half-Shell Scallops
  • 2 tsp finely chopped dill
  • 2 tsp finely chopped chives
  • 2 tsp finely chopped flat-leaf parsley
  • 2 tsp chopped baby capers
  • 2 finely chopped shallots
  • 1kg Australian Blue Mussels Shell On
  • 125ml white wine
  • 2 shallots, finely chopped
  • 2.50 gm caster sugar
  • 2.40 gm salt
  • 1/4 Granny Smith apple, cut into matchsticks
  • 20.00 ml apple cider vinegar
  • 7.20 gm honey
  • 250g Thinly Sliced Smoked Salmon
  • 1kg Fresh Australian Cooked Black Tiger Prawns
  • 12 fresh oysters
  • 20.00 ml baby capers
  • Dill sprigs, to serve
  • Mint leaves, to serve
  • Flat-leaf parsley leaves, to serve
  • Seafood sauce, aioli or mayonnaise, to serve
  • Lemon wedges, to serve
Instructions:
  • For the buttery BBQ lobster, slice the lobster tails in half lengthwise. Preheat a barbecue grill or chargrill to medium-high heat. Spritz the lobster with olive oil spray and season it. Grill for 8-10 mins, flipping occasionally, until the shell changes color and the meat is just cooked. Place on a plate. In a medium frying pan, melt the butter over high heat until it turns a nutty brown. Drizzle over the lobster and cover to maintain warmth.
  • For the herbed scallops, pat dry scallops and set shells aside. Heat a large frying pan with olive oil spray over high heat. Season scallops and cook for 1-2 minutes per side until golden and cooked as desired. Mix olive oil, dill, chive, parsley, and caper in a bowl. Place scallops back in shells and top with the dressing.
  • Heat oil in a large saucepan and sauté shallot until soft. Add mussels, pour in wine, bring to a boil, cover, and cook until mussels open. Transfer to a serving bowl and discard any unopened mussels.
  • For the mignonette dressing, combine shallot with vinegar, sugar, and salt in a bowl. Stir well and let it sit for 15 minutes to meld the flavors. Drizzle over freshly shucked oysters before serving.
  • Prepare the apple cider dressing by combining the sliced apple with vinegar, honey, and salt in a bowl. Mix well and let it sit for 5 minutes to enhance the flavors. Drizzle over the oysters before serving.
  • Create a stunning platter by artfully placing lobster, scallops, mussels, oysters, smoked salmon, and cooked prawns. Add capers on top of the salmon. Garnish with dill sprigs, mint leaves, and flat-leaf parsley. Serve promptly with seafood sauce, aioli or mayonnaise, and lemon wedges.
