Mustard and poppy seed potatoes

Sweet and spicy potatoes - a perfect blend of flavors you won't want to miss!
Ingredients:
  • 1kg Spunta potatoes, peeled, cut into 4cm chunks
  • 37.50 gm pure icing sugar
  • 36.40 gm olive oil
  • 23.40 gm Dijon mustard
  • 30.00 ml poppy seeds
Instructions:
  • Preheat your oven to 200C and prepare a baking tray by lining it with parchment paper.
  • In a large saucepan, add potatoes and cover with cold water. Season with a pinch of salt. Bring to a boil over high heat, then cook partially covered for 12 to 15 minutes until potatoes are just tender. Drain before further use.
  • In a large bowl, mix sugar, oil, mustard, poppyseeds, salt, and pepper. Add hot potato and toss to coat evenly. Transfer potato to a roasting pan in a single layer. Drizzle over remaining oil mixture. Roast for 30-35 minutes until golden. Serve with roast lamb, beef, or chicken.
