Taste.com.au and Pyrex present the fabulous Basic Beef recipe.
Ingredients:
  • 700g centre cut beef eye fillet
  • 36.40 gm olive oil
  • 46.80 gm whole grain mustard
  • 200g sugar snap peas, trimmed
  • 100g baby rocket leaves
  • 250g chopped up cherry tomatoes
  • 20.00 ml balsamic vinegar
Instructions:
  • Preheat your oven to 200°C (180°C fan-forced). Drizzle olive oil over the beef and sear in a non-stick frypan for about a minute until browned. Transfer the beef to an Easy Grab 1.9L Pyrex Oblong Baker and coat evenly with mustard on top and sides.
  • Place the beef in a preheated oven and roast until it reaches medium rare (60°C-65°C), approximately 20-25 minutes. Remove from the oven, transfer to a plate, and let it rest for 10 minutes before serving, unless you're too hungry to wait.
  • Blanch sugar snap peas in a pot of boiling water for 3 minutes. Shock in cold water and drain.
  • Thinly slice the beef and combine it in a large bowl with the sugar snap peas, rocket, and tomatoes. Serve by dividing it up and drizzle a little balsamic over the top for an extra touch of fancy before enjoying.
