Elegant roasted potatoes with dill and Dijon, perfect for the holidays.
Ingredients:
  • 1 pound fingerling potatoes, halved lengthwise
  • 1 tablespoon olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dill
  • 0.5 teaspoon fresh ground black pepper
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and line a baking sheet with shiny aluminum foil.
  • Add fingerling potatoes to a spacious bowl. Combine oil, mustard, dill, salt, and black pepper in a measuring cup, whisking until fully blended. Pour the mixture over the potatoes and mix well to coat them evenly. Transfer the coated potatoes to the baking sheet, spreading them out in a single layer.
  • Bake in the preheated oven for 20 minutes. Turn potatoes and continue baking until golden and crispy, about 10 more minutes.
