Ingredients:
  • 3 cups thinly sliced apples
  • 3 large eggs
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1.5 cups chopped walnuts
  • 1 cup raisins
  • 1 (8 ounce) package cream cheese, softened
  • 0.25 cup unsalted butter, melted and cooled
  • 2 cups confectioners' sugar
  • 1 teaspoon lemon juice
  • 1 lemon, zested
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking pan and arrange the apples evenly on the bottom.
  • Whisk eggs with a mixer until they become thick and pale. Then, incorporate sugar and oil.
  • Combine flour, cinnamon, baking soda, and salt in a bowl. Mix into the egg mixture until fully combined. Fold in walnuts, raisins, and vanilla extract; the batter will be thick. Spread batter over the apples in the pan.
  • Bake in the preheated oven for about 1 hour, or until a toothpick inserted into the center comes out clean. Allow it to cool for approximately 30 minutes before serving.
  • In a separate bowl, whip cream cheese until light and fluffy. Incorporate melted butter. Mix in confectioners' sugar, lemon zest, and lemon juice until fully blended. Frost the cooled cake with the mixture.
