Celebrate plum season with this sweet plum bread made with fresh plums, tangy yogurt, and simple pantry staples.
Ingredients:
  • 1 cup pitted, chopped plums
  • 1 tablespoon all-purpose flour
  • 0.5 cup margarine
  • 0.5 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 0.25 teaspoon baking soda
  • 0.33333334326744 cup plain yogurt
  • 0.25 cup brown sugar
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare a 9x5-inch loaf pan by greasing it with cooking spray or lining it with parchment paper.
  • Coat chopped plums with 1 tablespoon of flour in a bowl, then set aside.
  • In a large bowl, use an electric mixer to beat together white sugar, butter, and vanilla extract until light and fluffy. Add eggs and beat well. In a separate bowl, sift together 1 ½ cups of flour, salt, and baking soda. Gradually mix this into the egg mixture along with yogurt until smooth. Gently fold in plums coated with flour, then pour the batter into a prepared loaf pan and sprinkle brown sugar on top.
  • Bake in the preheated oven for 45 to 50 minutes until a toothpick comes out clean. Cool in the pan for 15 minutes, then invert onto a wire rack to cool completely.
