Delicious Christmas vegetable dish passed down from my mother-in-law, perfect for getting your family to eat more veggies.
Ingredients:
  • 1 (16 ounce) package baby carrots, sliced
  • 2 medium onions, sliced
  • 1 cup shredded Cheddar cheese
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1.5 cups milk
  • 0.125 teaspoon ground black pepper
  • 1 tablespoon butter
  • 1 cup fine dry bread crumbs
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • In a pot, simmer carrots and onions in lightly salted water until tender yet firm. Drain. Arrange half of the vegetables in a baking dish, sprinkle with 3/4 cup of cheese, top with the rest of the vegetables, and finish with the remaining cheese.
  • In a saucepan, melt 3 tablespoons of butter and whisk in flour until smooth. Slowly pour in milk until thickened, then season generously with salt and pepper. Pour the creamy mixture over the carrots, onions, and cheese in the baking dish.
  • Melt 1 tablespoon of butter in a small pot, then toss in the bread crumbs until combined. Spread the mixture evenly in the baking dish.
  • "Bake until golden and bubbling in a preheated oven for about 20 minutes."
