Skillet Ham and Vegetables au Gratin

Whip up a quick and satisfying skillet meal with ham, au gratin potatoes, broccoli, carrots, onions, and a cheesy sauce - perfect for a delicious weeknight dinner that beats frozen options.
Ingredients:
  • 2 tablespoons butter
  • 1/2 cup sliced carrot
  • 1/2 cup chopped onion
  • 1 box (4.7 oz) Betty Crocker™ Au Gratin Potatoes
  • 2 cups hot water
  • 1/2 cup milk
  • 1 1/2 cups chopped cooked ham
  • 2 cups frozen broccoli florets
  • 1/2 cup shredded cheddar cheese (2 oz)
Instructions:
  • In a 10-inch nonstick skillet over medium heat, melt butter. Add carrot and onion. Cook for 6 to 8 minutes, stirring often, until vegetables are soft.
  • Combine potatoes, sauce mix from the box, hot water, and milk. Stir vigorously until well combined. Bring the mixture to a gentle boil, stirring occasionally. Lower the heat, cover, and let it simmer for 10 minutes, stirring occasionally. Finally, add ham and broccoli, cover, and continue to cook for 10-12 minutes, stirring occasionally, until the potatoes and broccoli are tender.
  • Take the saucepan off the heat and stir in the cheese until it melts completely. Serve right away.
