Quick and easy one-skillet ham fried rice with veggies and eggs, perfect for busy weeknights.
Ingredients:
  • 2 tablespoons toasted sesame oil
  • 1 cup chopped green bell pepper
  • 0.75 cup matchstick-cut carrots
  • 1 cup chopped green onions, divided
  • 1 cup cubed ham
  • 0.66666668653488 cup frozen green peas, thawed
  • 4 garlic cloves, minced
  • 2 (8.5 ounce) packages Uncle Ben's® Ready Rice® Jasmine Rice
  • 3 tablespoons reduced-sodium soy sauce
  • 1 tablespoon unseasoned rice vinegar
  • 4 large eggs
Instructions:
  • In a large nonstick skillet over medium-high heat, heat oil. Add bell pepper and carrots and saute for 2 minutes. Then add 3/4 cup green onions, ham, green peas, and garlic; saute for an additional 3 minutes.
  • Place uncooked rice into the skillet, then drizzle with soy sauce and vinegar. Cook for 3 minutes, stirring occasionally. Create 4 wells in the rice mixture and carefully crack an egg into each well. Cover the pan and cook until the egg whites are fully cooked and the yolks reach your desired level of doneness, which typically takes 5 to 7 minutes. Uncover the pan and sprinkle the remaining 1/4 cup of green onions on top before serving.
