My tasty energy balls: date, cocoa & pumpkin seed

Nutritious energy balls, perfect snack boost for the day. Enjoy two balls per snack.
Ingredients:
  • 70 g pumpkin seeds
  • 20 g puffed brown rice or puffed quinoa
  • 50 g whole almonds
  • 80 g Medjool dates
  • 1 cm piece of fresh turmeric or ½ teaspoon ground turmeric
  • ½ teaspoon ground cinnamon
  • 1 heaped teaspoon quality cocoa powder
  • ½ tablespoon manuka honey
  • 1 orange
Instructions:
  • In a food processor, finely grind 40g of pumpkin seeds, then transfer to a plate. Add the remaining pumpkin seeds, puffed rice or quinoa, almonds, and dates (pitted) to the processor. Blitz until finely chopped. Grate in fresh turmeric or add ground turmeric, cinnamon, cocoa powder, and a pinch of sea salt. Blitz until finely ground, then add vanilla, honey, and half of the orange juice. Blitz for 1 to 2 minutes, stopping to scrape down the sides. Add more orange juice only if needed to bind the mixture. With wet hands, divide into 24 balls, rolling each in pumpkin seed dust. Store in an airtight container for up to 2 weeks.
