Nacho Cheese Sauce with Jalapeno

Spicy pickled jalapenos and their juice are melted with American cheese for a zesty nacho cheese sauce.
Ingredients:
  • 3 tablespoons butter
  • 0.25 cup minced onion
  • 3 pickled jalapeno pepper slices, minced
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 0.25 (1 pound) loaf processed cheese food (such as Velveeta®)
  • 0.25 teaspoon pickled jalapeno pepper juice
Instructions:
  • In a saucepan over medium-low heat, melt the butter and sauté the onion, garlic, and jalapeno until the onion turns translucent, about 5 minutes.
  • Coat vegetables evenly with flour in the onion mixture, then add milk. Cook until slightly thickened for 3 to 4 minutes. Stir in processed cheese until melted and smooth for about 15 minutes. Finish by adding pickled jalapeno juice.
