Nam Jim king prawns

"Zesty Thai dressing elevates juicy pan-fried prawns for a quick, flavorful dish."
Ingredients:
  • groundnut oil
  • 20 raw peeled king prawns tails left on, from sustainable sources
  • 2 spring onions
  • 2 limes
  • 1 long green chilli
  • 1 bunch of fresh coriander
  • 4 cm piece of ginger
  • 2 tablespoons fish sauce
  • 25 g palm sugar
  • sunflower oil for frying
  • 40 g vermicelli rice noodles
Instructions:
  • To prepare the nam jim dressing, grate lime zest into a food processor, add lime juice, deseeded chili, roughly chopped coriander, peeled and chopped ginger, fish sauce, and palm sugar. Blitz until finely chopped, season, and set aside. Heat 3cm of sunflower oil in a deep saucepan until it reaches 180ºC. Test the oil by frying a piece of noodle until golden brown. Break noodles into 5cm strips. Fry noodles in batches for 30 seconds each until crispy, then drain on paper towels. In a large frying pan, heat groundnut oil, fry prawns for 4 minutes until golden brown, working in batches if necessary. Toss prawns with the nam jim dressing, sprinkle with sliced spring onions, and crispy noodles. Serve for a delicious meal.
