Elevate Christmas with a chic Asian-inspired appetizer.
Ingredients:
  • 1 long red chilli, roughly chopped
  • 2 cloves garlic, chopped
  • 2 coriander roots, washed, roughly chopped
  • 2.50 gm caster sugar
  • 80ml (1/3 cup) fish sauce
  • 80ml (1/3 cup) lemon juice
  • 24 freshly shucked oysters
  • Rock salt or ice, to serve
  • Lemon wedges, to serve
Instructions:
  • Blend the chilli, garlic, coriander, sugar, fish sauce, and lemon juice in a food processor until the mixture is smooth. Yield: 180ml.
  • Prepare a bed of rock salt or ice on a platter and arrange the oysters on top. Accompany with lemon wedges and a flavorful nam jim dressing.
