Indulge in luxurious Oysters topped with creamy creme fraiche and delicate salmon roe for a gourmet experience.
Ingredients:
  • 125g (1/2 cup) creme fraiche or sour cream
  • 20.00 ml finely chopped fresh chives
  • 11.80 gm horseradish
  • 5.30 gm fresh lemon juice
  • Salt & freshly ground black pepper
  • Rock salt, to serve
  • 48 (4 dozen) natural oysters (such as Sydney rock oysters), in the half shell
  • 50g salmon roe
  • Lemon wedges, to serve
Instructions:
  • Combine the creme fraiche, chives, horseradish, and lemon juice in a small bowl, stirring until well mixed. Season with salt and pepper to taste.
  • Spread the rock salt over a large serving platter. Place the oysters on top of the salt. Spoon half a teaspoon of creme fraiche mixture onto each oyster.
  • Garnish the oysters with salmon roe, cover with plastic wrap, and refrigerate until serving time or enjoy them right away with lemon wedges.
