Oysters with chilli and mint crunches

Irresistible fresh oysters topped with crispy mint and chili breadcrumbs.
Ingredients:
  • 27.30 gm extra virgin olive oil
  • 375.00 ml fresh breadcrumbs
  • 4 anchovies, finely chopped
  • 1 small red chilli, finely chopped
  • 30.00 ml chopped fresh mint leaves
  • 24 fresh oysters, in the half shell
  • Lemon wedges, to serve
Instructions:
  • In a large non-stick frying pan over medium heat, heat oil. Add breadcrumbs, anchovy, garlic, and chili. Stir frequently and cook for 6 to 8 minutes until breadcrumbs are crisp and golden.
  • After cooking, allow it to rest for 5 minutes. Mix in fresh mint and generously season with salt and pepper.
  • Lay out oysters elegantly on a platter. Generously scatter breadcrumb topping over the oysters. Garnish with lemon wedges and serve.
