Oysters with chilli and bacon

Spicy chili and crispy bacon elevate fresh oysters to the next level.
Ingredients:
  • 27.30 gm olive oil
  • 3 rashers middle bacon, rind removed, finely chopped
  • 1 long red chilli, deseeded, finely chopped
  • 2 green onions, thinly sliced
  • 20.00 ml red wine vinegar
  • 16 large oysters
Instructions:
  • In a frying pan over medium-high heat, heat 2 teaspoons of oil. Add bacon and cook, stirring occasionally, for 5 to 7 minutes until crisp. Remove from heat and let it stand for 2 minutes. Mix in chili, onion, vinegar, and the rest of the oil, stirring to combine.
  • Arrange the oysters elegantly on a platter and generously top them with the flavorful bacon mixture. Serve and enjoy!
