Oysters with chilli and bacon

Spice up fresh oysters with zesty chili and crispy bacon toppings.
Ingredients:
  • 3 rashers middle bacon, rind removed, finely chopped
  • 1 long red chilli, deseeded, finely chopped
  • 2 green onions, thinly sliced
  • 20.00 ml red wine vinegar
  • 16 large oysters
Instructions:
  • In a hot frying pan, sizzle 2 teaspoons of oil. Toss in the bacon and cook until crisp, about 5 to 7 minutes. Take off the heat and let it rest for 2 minutes. Mix in chilli, onion, vinegar, and the remaining oil, stirring well to blend.
  • Arrange the oysters beautifully on a platter and generously spoon the flavorful bacon mixture over them. Serve and enjoy the delicious combination of flavors!
