Nantucket cranberry pie: Top with vanilla yogurt or ice cream for a tart-sweet delight.
Ingredients:
  • cooking spray
  • 2 cups fresh cranberries
  • 0.5 cup chopped pecans
  • 1.25 cups white sugar, divided
  • 1 cup all-purpose flour
  • 0.75 cup unsalted butter, melted
  • 2 large eggs, slightly beaten
  • 1.5 teaspoons almond extract
Instructions:
  • 1. Preheat your oven to 325 degrees F (165 degrees C) and generously spray an 8-inch deep dish pie pan with cooking spray. Add cranberries, pecans, and 1/2 cup of sugar to the pie pan.
  • In a bowl, blend together flour, the rest of the sugar, melted butter, eggs, and almond extract using an electric beater until smooth and pale. Pour the mixture over the cranberries in the pie pan.
  • Bake in the preheated oven for 35 minutes until lightly golden on the edges and set in the middle. Be careful not to overbake and dry it out.
