Elevate banana muffins with ripe bananas, cognac, spiced rum, and honey for a decadent twist on a classic treat.
Ingredients:
  • 6 very ripe bananas, mashed
  • 0.5 cup brown sugar
  • 0.25 cup honey
  • 0.25 cup spiced rum
  • 0.25 cup cognac
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1.5 cups white sugar
  • 0.66666668653488 cup brown sugar
  • 2 eggs, lightly beaten
  • 10 tablespoons unsalted butter, melted
  • 3 tablespoons butter
  • 1 cup brown sugar
  • 3 tablespoons all-purpose flour
  • 2 teaspoons ground cinnamon
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and generously grease two twelve-cup muffin tins.
  • Combine ripe bananas, 1/2 cup brown sugar, honey, rum, and cognac in a mixing bowl and blend until creamy using an electric mixer.
  • Whisk 3 cups flour, baking soda, baking powder, and salt in a large bowl. In a separate bowl, cream together white sugar, 2/3 cup brown sugar, eggs, and melted butter. Gently combine the banana mixture and creamed egg mixture with the flour until just mixed. Spoon batter into muffin tins, filling 3/4 full.
  • Combine 1 cup brown sugar, 3 tablespoons flour, and cinnamon in a small bowl. Add 3 tablespoons of butter and mix until the mixture forms coarse crumbs. Sprinkle over the batter in the muffin tins.
  • Bake muffins in a preheated oven until perfectly golden, about 20 minutes.
