"Easy strawberry Napoleon: Layers of puff pastry, pudding mix, and fresh strawberries for a delicious twist on a French classic."
Ingredients:
  • 1 (3.5 ounce) package instant vanilla pudding and pie filling
  • 1 cup cold 2% milk
  • 1.5 cups non-dairy whipped topping, thawed
  • 0.5 (17.25 ounce) package frozen puff pastry, thawed
  • 1 pint fresh strawberries, thinly sliced
  • 0.25 cup confectioners' sugar
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C). Mix together the pudding mix and cold milk, then gently stir in the fluffy whipped topping. Chill in the refrigerator until you're ready to enjoy.
  • Roll out the pastry on a lightly floured surface. Cut it into 3 strips along the fold lines, then slice each strip into four equal pieces. Place the pieces 2 inches apart on a baking sheet.
  • Bake in a preheated oven for 15 minutes until golden brown. Then, remove from the baking sheet and allow it to cool.
  • Divide the pastries into 2 layers, reserving the 8 most visually appealing tops. Spread the 8 bottom layers with spoonfuls of the pudding mixture. Add a layer of strawberries, a touch of pudding, and another pastry layer on top of each. (A bit of pudding on the berries will assist in holding the layers together.) Coat with the leftover pudding mixture and strawberries, and finish with the remaining pastry layers (the top ones). Dust with confectioner's sugar.
