Indulge in a heavenly raspberry Napoleon: layers of buttery puff pastry, creamy cheese, and juicy raspberries.
Ingredients:
  • 1 (17.5 ounce) package frozen puff pastry, thawed
  • 2 tablespoons 35% heavy whipping cream
  • 1 teaspoon lemon zest
  • 1 pint fresh raspberries
  • 3 tablespoons confectioners' sugar, or as needed
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), and elegantly line 2 baking sheets with parchment paper.
  • On a lightly floured surface, roll out the puff pastry sheets to 1/4-inch thickness. Cut each sheet into 16 squares. Place the squares on a baking sheet and gently prick them all over with a fork. Repeat with the second puff pastry sheet.
  • Bake in the preheated oven until golden brown, about 10-15 minutes. Allow to cool for 10 minutes before serving.
  • In a bowl, delicately blend cream cheese, white sugar, heavy cream, and lemon zest until the mixture is velvety and lustrous. Then generously spoon the cream cheese concoction onto 16 squares and evenly layer it with fresh raspberries. Finish by topping with the remaining puff pastry squares and a sprinkle of confectioners' sugar for a touch of sweetness.
