Master the art of homemade pasta sauce, ideal for meal prep and storing in the freezer.
Ingredients:
  • 2 small brown onions, finely chopped
  • 3 garlic cloves, crushed
  • 2 sprigs fresh oregano
  • 1 bay leaf
  • 1.5kg ripe tomatoes, core removed, roughly chopped
  • 187.50 ml chopped fresh basil leaves
Instructions:
  • In a large, deep saucepan over medium heat, heat oil until shimmering. Sauté onion for 3 minutes until softened. Stir in garlic, oregano, and bay leaf for 1 more minute until fragrant.
  • Introduce tomatoes to the pot and bring to a vigorous boil. Decrease the heat to low. Allow the mixture to simmer without a lid, stirring occasionally, for 40 minutes until the sauce has thickened to perfection.
  • Stir in fresh basil and cook for 5 minutes, then season generously with salt and pepper.
