Gluten-free pasta with napoletana sauce

Make a delicious gluten-free family meal.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 2 garlic cloves, crushed
  • 22.20 gm gluten-free tomato paste
  • 2 x 410g cans crushed tomatoes
  • Pinch of sugar
  • 20.00 ml fresh basil leaves, finely chopped
  • 500g gluten-free pasta
  • Finely grated parmesan (or vegetarian hard cheese), to serve
  • Fresh basil leaves, to serve
Instructions:
  • In a saucepan over medium heat, sauté onion in oil until tender. Stir in garlic and tomato paste; cook for 1 minute. Add tomatoes, 1/2 cup cold water, and sugar, then mix well.
  • Bring the mixture to a hearty boil, then lower the heat to a gentle simmer for 15 minutes. Finish by stirring in fresh basil and seasoning generously with salt and pepper.
  • While pasta is cooking in a generously salted pot of boiling water for 2 to 3 minutes until al dente, drain and return it to the pan. Mix in the sauce, ensuring it's well combined. Portion the pasta onto plates and garnish with a sprinkle of Parmesan cheese and fresh basil leaves before serving.
