Delicious Navajo Tacos: Fry bread with chili-pinto beans and toppings.
Ingredients:
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 cup warm water
  • 1 pound ground beef
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (1.25 ounce) package chili seasoning (such as McCormick®)
  • vegetable oil (such as Crisco®) for frying
Instructions:
  • In a spacious bowl, combine flour, baking powder, and salt. Add water and gently mix until dough comes together. Cover with plastic wrap and allow to rest for approximately 15 minutes.
  • Preheat a large skillet over medium heat. Brown the ground beef for about 5 minutes, stirring occasionally. Drain off any excess grease. Add in pinto beans, diced tomatoes with juices, and chili seasoning. Simmer for 10 to 15 minutes until flavors meld together.
  • Lightly oil your hands and shape a baseball-sized piece of dough into a 4-inch round, 1/2-inch thick. Repeat with the remaining dough.
  • Heat a generous amount of oil in a deep fryer or large saucepan until it reaches a depth of 2 to 3 inches. Fry the dough rounds in batches until they are beautifully golden brown, puffy, and perfectly cooked, about 2 to 3 minutes on each side. Place them on paper towels to drain off any excess oil.
  • While the fry bread is still hot, plate it individually and generously spoon the chili mixture over each serving.
