Preserve summer's sweet nectarines with vanilla and almond liqueur for a year-round treat.
Ingredients:
  • 500g nectarines, halved, stone removed, finely chopped
  • 1 lemon, halved, juiced
  • 1 vanilla bean, split lengthways, seeds separated
  • 335g (1 1/2 cups) white sugar
  • 20.00 ml amaretto liqueur
Instructions:
  • Put the nectarine, lemon juice, lemon halves, vanilla seeds, and vanilla bean in a big microwave-safe bowl. Microwave on High for 5 minutes, stirring occasionally, until the mixture is heated through.
  • Combine the sugar and stir well. Cook on High for 15 minutes. Stir in the amaretto and cook for another 5 minutes until the jam thickens and reaches setting point.
  • Discard the lemon halves. Transfer the jam to a clean, dry sterilized jar. Seal and invert for 2 minutes, then set aside to cool completely.
