Nectarines: Vitamin C & fiber-packed sweet fruit, perfect for simple, delicious recipes.
Ingredients:
  • 180g butter, at room temperature
  • 215g (1 cup) caster sugar
  • 3 eggs
  • 225g (1 1/2 cups) self-raising flour, sifted
  • 55g (3/4 cup) shredded coconut
  • 175g ctn vanilla yoghurt
  • 4 nectarines, halved, stone removed, thinly sliced
  • 25g (1/3 cup) shredded coconut, extra
Instructions:
  • Preheat the oven to 180 C. Prepare a 24cm springform pan by lining the base and sides with non-stick baking paper. In a food processor, blend butter, sugar, eggs, flour, coconut, and yogurt until smooth. Pour the mixture into the prepared pan.
  • Place the slices of nectarine elegantly over the cake and bake for 1 hour and 10 minutes. Sprinkle the additional coconut on top and bake for an extra 5 minutes until the coconut turns a light golden color and a toothpick inserted into the center comes out clean.
