Ingredients:
  • 2 sheets (25 x 25 cm) frozen puff pastry, thawed
  • 20g butter
  • 14.40 gm honey
  • 2 (about 85g each) nectarines, halved, stones removed, thinly sliced lengthways
  • 18.00 gm demarara sugar
Instructions:
  • Preheat the oven to 210°C and prepare 2 baking trays with non-stick baking paper.
  • For the perfect kid-sized treats, cut out 6 discs from each sheet of pastry using a round 8cm cutter. Arrange them on the trays. Then, create a neat border inside each disc by gently marking with a round 6.5cm cutter, being careful not to cut through completely.
  • In a small saucepan, gently melt the butter and honey together until combined. Take it off the heat. Brush the butter mixture lightly over the pastry discs. Place the nectarine slices in the center of each disc.
  • Sprinkle sugar over pastry and fruit, bake until golden and puffed, then cool on a wire rack.
