Elevate your potato salad with a refreshing twist.
Ingredients:
  • 1 kg new potatoes scrubbed
  • 1 teaspoon Dijon mustard
  • 2 tablespoons white wine vinegar
  • 6 tablespoons extra virgin olive oil
  • 3 small shallots very finely chopped
  • 1 handful fresh flat-leaf parsley roughly chopped
Instructions:
  • Boil the potatoes until tender in seasoned water. Drain and let them cool slightly. Combine mustard and vinegar, gradually mix in olive oil. Stir in shallots and parsley, season with sea salt and black pepper. Cut potatoes in half and toss with the vinaigrette.
