Delicious chilled red potato salad with eggs, celery, and creamy mayo dressing - ideal for cookouts!
Ingredients:
  • 3 pounds unpeeled red potatoes
  • 1.5 cups mayonnaise
  • 2 tablespoons milk
  • 2 tablespoons distilled white vinegar
  • 0.5 cup sliced green onions
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 cup sliced celery
Instructions:
  • 1. Bring a pot of generously salted water to a vigorous boil. Add red potatoes and cook until perfectly tender yet slightly firm, approximately 15 minutes. Drain, allow to cool, and dice into 1-inch cubes before transferring them to a medium bowl.
  • In a medium saucepan, gently nestle eggs and cover with cold water. Allow water to come to a boil, then promptly turn off the heat. Let the eggs rest in the hot water for 10 to 12 minutes. Remove the eggs, cool, peel, and dice as needed.
  • Whisk together mayonnaise, milk, white vinegar, green onions, salt, and pepper in a small bowl. Pour over the potatoes, mix with eggs and celery. Chill in the refrigerator for about 2 hours before serving.
