Cheesy sausage breakfast casserole to kick off New Year's Day.
Ingredients:
  • 10 oz ciabatta bread, cut into 1-inch cubes (6 cups)
  • 2 cups milk
  • 8 eggs
  • 1 tablespoon chopped fresh oregano leaves
  • 1 lb bulk spicy pork sausage
  • 1 large onion, chopped (1 cup)
  • 1 red bell pepper, chopped
  • 2 cups shredded sharp Cheddar cheese (8 oz)
  • Additional chopped fresh oregano leaves
Instructions:
  • Spread the bread cubes on a 17x12-inch half-sheet pan and leave uncovered for 8 hours to allow them to dry out.
  • Combine milk, eggs, and a touch of fragrant oregano in a spacious bowl. Gently fold in the bread until every piece is soaked in the flavorful egg mixture. Cover and chill in the refrigerator for 1 hour.
  • Preheat oven to 350°F. Grease a 13x9-inch (3-quart) glass baking dish with cooking spray. In a 12-inch skillet, cook sausage, onion, and bell pepper for 8 minutes, stirring occasionally, until sausage is cooked through. Drain any excess grease.
  • Combine the sausage mixture and 1 cup of cheese with the bread mixture, mix thoroughly. Transfer the mixture into a baking dish, then sprinkle the remaining 1 cup of cheese on top.
  • Bake for 40-45 minutes until the center sets and the cheese bubbles. Rest for 10 minutes, then garnish with extra oregano.
