Ingredients:
  • 12 ounces bacon, sliced into 1-inch pieces
  • 0.5 cup diced onion
  • 0.5 cup diced celery
  • 1 teaspoon salt, plus more to taste
  • 0.5 teaspoon freshly ground black pepper
  • 1 pinch cayenne pepper, or to taste
  • 0.25 teaspoon dried thyme
  • 0.25 teaspoon dried oregano
  • 2 tablespoons tomato paste
  • 4 cloves garlic, finely minced
  • 4 cups chicken broth
  • 1 cup water
  • 1 large bunch Swiss chard
  • 1 (15.5 ounce) can cannellini beans, drained
  • 1.25 cups orecchiette pasta
  • 1 tablespoon freshly grated Parmigiano-Reggiano, or to taste
  • 1 drizzle olive oil
  • 1 pinch red pepper flakes, or to taste
Instructions:
  • Set a cold soup pot over medium heat. Add sliced bacon and cook, stirring occasionally, until the fat has rendered out and the bacon starts to crisp up, about 5 minutes. If preferred, use a paper towel to remove excess fat, leaving about 1 tablespoon in the pot. Add onions, celery, and salt, and saute until onions are translucent and vegetables are softened, for 5 to 7 minutes.
  • Mix in black pepper, cayenne, dried thyme, dried oregano, and tomato paste. Cook until the tomato paste caramelizes onto the pan, around 2 minutes. Add the minced garlic and cook for an additional 1 to 2 minutes. Pour in chicken broth and water, increase heat to high, and bring to a high simmer. Lower heat to medium and simmer while preparing the Swiss chard.
  • Separate chard leaves from stems. Slice leaves in one direction, then the other. Wash leaves in a bowl of water to remove dirt. Drain the washed greens in a separate bowl, a handful at a time.
  • Add the Swiss chard to the pot and let it simmer over medium heat until the greens are tender, approximately 10 minutes. Then, season with salt to taste.
  • Add the drained beans and turn up the heat to high until it boils. Mix in the pasta and lower the heat to medium-high. Cook for 12 to 15 minutes, stirring occasionally, until the pasta is tender.
  • After the pasta is cooked to perfection, taste the dish to adjust the seasoning. Serve promptly in generous portions, topping with Parmigiano-Reggiano cheese, a splash of olive oil, and a sprinkle of red pepper flakes.
