Japanese grilled sake and wasabi prawns

In Japan, prawns symbolize longevity; in China, they bring happiness and good luck.
Ingredients:
  • 1.8kg large green king prawns, peeled, tails intact
  • 62.50 ml cooking sake
  • 42.00 gm soy sauce
  • 1cm piece fresh ginger, peeled, finely grated
  • 2 tsp Wasabi Paste
  • 81.68 gm Kewpie Mayonnaise
  • 21.00 gm lemon juice
  • 4 green onions, thinly sliced diagonally
  • Toasted sesame seeds, to serve
Instructions:
  • Butterfly prawns by making a shallow cut along the back from top to tail, removing and discarding veins.
  • In a large glass or ceramic bowl, mix together sake, soy sauce, ginger, and half of the wasabi. Add prawns and toss to coat. Cover and refrigerate for 30 minutes.
  • Preheat a greased barbecue grill or chargrill pan over high heat. Drain prawns and discard marinade. Cook prawns, turning occasionally, for 2 to 3 minutes until they are lightly charred and cooked through.
  • In a bowl, mix together mayonnaise, lemon juice, and the rest of the wasabi. Season with salt. Arrange prawns on a serving platter and top with green onion and sesame seeds. Serve with the delicious wasabi mayonnaise.
