Try succulent Japanese grilled chicken with soba noodles and bok choy for a crowd-pleasing dish!
Ingredients:
  • 62.50 ml mirin (see note)
  • 65.63 gm salt-reduced soy sauce
  • 2cm piece ginger, finely grated
  • 4 (180g each) chicken breast fillets, trimmed
  • 200g soba noodles
  • steamed baby bok choy, to serve
Instructions:
  • In a bowl, mix oil, mirin, soy sauce, ginger, and garlic. Place chicken in a shallow dish and pour 1/4 cup of the oil mixture over it. Let marinate for 2 to 3 hours, if possible.
  • Boil noodles in water until tender, about 4 minutes. Drain and rinse with cold water. Set aside.
  • Preheat a barbecue plate or chargrill over medium heat. Grill chicken for 5 to 6 minutes per side until fully cooked. Transfer to a plate, cover, and let it rest for 5 minutes. Slice thinly before serving.
  • Plate the noodles and bok choy, then add the chicken on top. Finish by drizzling with the remaining oil mixture before serving.
