Japanese-style steamed clams with sake, mirin, and green onions, a delightful dish for seafood enthusiasts.
Ingredients:
  • 4 teaspoons sake
  • 4 teaspoons mirin (Japanese sweet wine)
  • 2 teaspoons rice vinegar
  • 1.25 pounds clams in shell, scrubbed
  • 3 tablespoons butter
  • 1 teaspoon soy sauce
  • 1 green onion, chopped
Instructions:
  • Clean and rinse clams well. Let them soak in a large bowl of cold water for 5 minutes, then drain them completely.
  • 1. Preheat a wok or large saucepan over high heat, then swiftly pour in the sake, mirin, and rice vinegar. Toss in the clams, cover, and cook until they open, about 3 to 4 minutes. Remove any unopened clams before serving.
  • Skim off any scum that forms, then add butter, soy sauce, and green onion. Stir well to coat the clams as the butter melts. Place clams on a serving plate and pour the sauce over them. Serve promptly.
