Delicious steamed clams with spicy chorizo for a quick and flavorful dish.
Ingredients:
  • 0.5 cup finely diced onions
  • 3 ounces Spanish chorizo sausage, quartered lengthwise, cut into1/4-inch pieces
  • 4 cloves garlic, minced
  • 1.5 cups white wine
  • 3 pounds littleneck clams, scrubbed and rinsed
  • 0.33333334326744 cup chopped Italian parsley
Instructions:
  • In a large pot over medium heat, sauté onions in olive oil until translucent, about 3-4 minutes. Stir in chorizo and cook to render some fat for about 3 minutes. Add garlic and cook until fragrant, about 1 minute.
  • Increase heat to high and pour in wine, bringing the liquid to a vigorous boil. Add clams evenly, cover, and cook for about 7 minutes until clams open. Shake the pot occasionally using potholders or a kitchen towel without removing the lid. Avoid stirring.
  • Once the clams have opened, take them off the heat and mix in the fresh parsley and butter.
  • Serve the clams and their savory broth in warmed bowls.
