Indulge in a savory ocean treat by steaming fresh clams and serving them with rich melted butter.
Ingredients:
  • 4 pounds soft-shell clams in shells
  • 6 cups water
  • 1/3 cup white vinegar
  • 1/2 cup boiling water
  • Butter or margarine, melted, if desired
Instructions:
  • Inspect the clams and remove any broken shells or open clams. Place the remaining clams in a large container and cover them with 6 cups of water and vinegar. Let them sit for 30 minutes, then drain and scrub the clams in cold water.
  • Steam clams in boiling water until they open at least 1 inch, removing each as it opens. Discard any unopened clams.
  • Top fresh, steaming clams with a generous dollop of savory butter before serving.
