Japanese-style condensed milk bread recipe

Easy and sweet Japanese milk bread with condensed milk for a light, brioche-like treat. Use a dough hook for effortless kneading.
Ingredients:
  • 250ml (1 cup) milk, slightly warmed, plus 2 tbsp extra
  • 60ml (1/4 cup) sweetened condensed milk
  • 40.00 gm caster sugar
  • 2 tsp (7g sachet) dried yeast
  • 400g (2 2/3 cups) plain flour
  • 2.40 gm salt
  • 60g butter, at room temperature
  • 1 egg yolk
  • Jam, to serve (optional)
  • 25.80 gm sweetened condensed milk
  • 20g butter, melted
Instructions:
  • In a large bowl, blend warm milk, condensed milk, egg, sugar, and yeast until smooth. Mix in flour and salt until a dough forms. Stir in butter until fully incorporated.
  • Transfer the sticky dough onto a lightly floured surface and knead it into a smooth and elastic ball for 10 minutes. Place the dough in a large, lightly oiled bowl, cover it loosely with a clean tea towel, and let it rest in a warm place for 1 hour until it doubles in size.
  • 1. Grease two 9 x 19cm loaf pans generously. 2. Punch down the dough and divide it in half. 3. Roll out one half of the dough into a 16 x 40cm rectangle. 4. Roll the dough from one short end into a tight log, then cut it into 8 equal slices. 5. Place the slices into one prepared loaf pan and repeat the process with the remaining dough in the other pan. 6. Cover loosely with a clean tea towel and let it sit for 40 minutes or until slightly risen.
  • Preheat the oven to 180C/160C fan.
  • Whisk together the egg yolk and additional milk in a small bowl. Brush the dough with the milk mixture. Bake for 20 minutes or until golden brown. Let cool in pans for 10 minutes before transferring to a wire rack.
  • Mix together the glaze ingredients and generously brush over the freshly baked loaves. Enjoy with jam, if desired.
