Lucky New Year's Soup: A flavorful blend of black-eyed peas and collard greens, bringing you luck and prosperity in each spoonful.
Ingredients:
  • 1 tablespoon extra-virgin olive oil
  • 2 cloves garlic, crushed
  • 1 small onion, chopped
  • 2 medium carrots, peeled and sliced
  • 3 leaves collard greens, coarsely chopped
  • 1 (15 ounce) can black-eyed peas, rinsed and drained
  • 1 (14.5 ounce) can vegetable broth
  • 1 cup water
  • 0.5 cup quinoa
  • 1 tablespoon cider vinegar, or to taste
  • salt and ground black pepper to taste
Instructions:
  • In a soup pot over medium heat, warm olive oil. Sauté garlic until golden, around 3 minutes. Next, add onion and carrots; cook until carrots are golden and onion is translucent, for 7 to 8 minutes. Finally, add collard greens and cook until wilted, about 5 minutes.
  • Combine black-eyed peas and vegetable broth in a pot and bring to a boil. Cover, reduce heat to low, and simmer until vegetables are soft, about 20-25 minutes.
  • While you wait, bring water and quinoa to a gentle boil in a saucepan. Cover, reduce heat, and simmer for about 10 minutes until water is absorbed.
  • Mix in the cooked quinoa and let it simmer with the soup until the collard greens are tender, approximately 10 minutes. Finally, add the cider vinegar and season with salt and pepper.
