Ingredients:
  • 85g (3/4 cup) almond meal
  • 80g (2/3 cup) walnut halves, finely chopped
  • 30g (3 tbsp) sesame seeds
  • 55g (1/4 cup) caster sugar
  • 60g (3 tbsp) butter, at room temperature
  • 340g (2 cups) white rice flour
  • 500ml (2 cups) fresh orange juice
  • 375ml (1 1/2 cups) water
  • 125ml (1/2 cup) dry sherry
  • 40.00 gm caster sugar
Instructions:
  • In a medium bowl, mix almond meal, walnuts, sesame seeds, and sugar. Add butter and combine until a thick paste forms. Roll heaped teaspoons of the mixture into balls.
  • Pour the rice flour onto a large shallow tray. Fill a medium bowl with cold water. Dip 1/3 of the balls in water swiftly, then transfer them to the flour using a slotted spoon. Roll the balls in the flour until fully coated. Repeat the dipping and coating process for the remaining balls.
  • Toss the balls in the flour until they are evenly and generously coated. Place them on a large tray and continue with the remaining balls.
  • In a medium saucepan, combine orange juice, water, sherry, and sugar. Stir over medium heat until the sugar dissolves. Increase heat, bring to a boil, then cover to keep warm once removed from heat.
  • 1. Bring a large saucepan of water to a boil. Add 1/4 of the dumplings and bring back to a boil. Cook uncovered for 1 minute. Transfer the dumplings to warmed serving bowls using a slotted spoon. Repeat with the remaining dumplings.
  • Bring the orange soup to a boil over high heat, then generously pour it over the dumplings and serve right away.
