Atlantic-Canadian twist on macaroni goulash with corned beef, Parmesan cheese topping, served piping hot.
Ingredients:
  • 3 cups uncooked elbow macaroni
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 small green bell pepper, finely chopped
  • 1 (12 ounce) can corned beef
  • 1 (10.75 ounce) can condensed tomato soup
  • 0.33333334326744 cup ketchup
  • 1 cup freshly shredded Parmesan cheese
Instructions:
  • In a large pot, bring salted water to a rolling boil. Add macaroni and cook until al dente, about 8 minutes. Drain pasta in a colander in the sink.
  • In a large pot over medium heat, sauté onion and garlic in olive oil until onion is soft, about 5 minutes. Add green pepper and cook until tender, about 8 minutes more. Mash in corned beef and simmer until hot. Stir in tomato soup, ketchup, cooked macaroni, salt, and black pepper. Bring to a simmer over medium-low heat. Sprinkle with Parmesan cheese and serve.
