Atlantic-Canadian twist on macaroni goulash with corned beef, Parmesan cheese topping, served piping hot.
Ingredients:
3cups uncookedelbow macaroni
1tablespoonolive oil
1onion, finely chopped
2clovesgarlic, minced
1 small green bell pepper, finely chopped
1 (12 ounce) cancorned beef
1 (10.75 ounce) cancondensed tomato soup
0.33333334326744 cupketchup
1cupfreshly shreddedParmesan cheese
Instructions:
In a large pot, bring salted water to a rolling boil. Add macaroni and cook until al dente, about 8 minutes. Drain pasta in a colander in the sink.
In a large pot over medium heat, sauté onion and garlic in olive oil until onion is soft, about 5 minutes. Add green pepper and cook until tender, about 8 minutes more. Mash in corned beef and simmer until hot. Stir in tomato soup, ketchup, cooked macaroni, salt, and black pepper. Bring to a simmer over medium-low heat. Sprinkle with Parmesan cheese and serve.
