Delicious spice-molasses bread with abundant raisins, a cherished Newfie recipe.
Ingredients:
  • 4 cups raisins
  • 0.5 cup lukewarm water
  • 1 teaspoon white sugar
  • 1 (.25 ounce) envelope active dry yeast
  • 2.5 cups milk
  • 0.25 cup butter
  • 1 tablespoon salt
  • 0.5 cup molasses
  • 6 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground mace
  • 1 teaspoon ground cloves
Instructions:
  • Put the raisins in a heatproof bowl and add enough boiling water to cover them completely. Seal the bowl with plastic wrap or a plate and let it sit overnight.
  • In a small bowl, combine sugar with lukewarm water until dissolved. Sprinkle yeast over the mixture and let it soften and bubble for 10 to 15 minutes. In a saucepan over medium heat, melt butter with milk and salt. Remove from heat and let cool until lukewarm (105 to 110 degrees F).
  • After cooling the milk, sieve out the raisins and mix them into the milk. Combine with the yeast mixture and molasses. In another bowl, sift together flour, cinnamon, mace, and clove. Gradually add half the flour mixture to the milk mix, stir with a wooden spoon and beat for 2 to 3 minutes. Add the remaining flour, stir until a moist dough forms.
  • Transfer dough to a flat surface and knead for 10 minutes until smooth and elastic, adding extra flour if needed to prevent sticking. Place in a large oiled bowl, cover, and let rise in a warm, draft-free spot until doubled in size, about 1 1/2 to 2 hours.
  • Grease two loaf pans and set aside. Divide dough in half, shape into 2 loaves, place in pans, cover, and let rise until doubled in bulk, 1 to 2 hours.
  • Heat your oven to 375 degrees F (190 degrees C).
  • Bake the loaves in a preheated oven for about 1 hour, or until they are beautifully browned and sound hollow when tapped on the bottom.
