Niçoise French Bread Pizza

French-style bread pizza topped with roasted veggies, eggs, olives, and cheese - ready in 40 minutes!
Ingredients:
  • 4 roma (plum) tomatoes, cut into 1/4-inch slices
  • 1 medium green bell pepper, cut into 1/4-inch rings
  • 1 large onion, thinly sliced
  • 1/2 cup Italian dressing
  • 1/2 loaf (1-pound size) French bread, cut horizontally in half
  • 2 hard-cooked eggs, sliced
  • 1/4 cup sliced ripe olives
  • 1 cup finely shredded mozzarella cheese (4 ounces)
Instructions:
  • Preheat oven to 450°F. Cover a 15 1/2x10 1/2x1-inch jelly roll pan with aluminum foil. Arrange tomatoes, bell pepper, and onion on the foil. Brush vegetables on both sides with half of the dressing. Bake for 12-15 minutes until onion is crisp-tender.
  • Lower oven temperature to 375°. Take out vegetables and foil from the pan. Arrange bread halves, cut sides up, in the pan. Brush with the remaining dressing. Sprinkle evenly with roasted vegetables, eggs, olives, and cheese.
  • Bake for 8 to 10 minutes until the cheese is melted, then slice into 2-inch pieces.
