Niçoise Tofu Skillet Supper

Sizzling French salad with savory seasoned tofu.
Ingredients:
  • 2 tablespoons olive or vegetable oil
  • 1/2 cup coarsely chopped red onion
  • 4 to 5 small red potatoes, sliced (2 cups)
  • 1 cup frozen cut green beans
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon garlic salt
  • 1/2 package (14-ounce size) firm tofu, cut into 1/2-inch cubes
  • 2 roma (plum) tomatoes, thinly sliced
  • 1 hard-cooked egg, chopped
Instructions:
  • In a large skillet, heat oil over medium-high heat. Sauté onion for 2 minutes, stirring frequently. Add potatoes, reduce heat to medium-low, cover, and cook for 10 to 12 minutes until potatoes are tender, stirring occasionally.
  • Mix in fresh green beans, fragrant Italian seasoning, and savory garlic salt. Let it simmer covered for 6 to 8 minutes, stirring every so often, until the beans are tender and the potatoes turn a light golden brown.
  • Gently stir in the tofu and tomatoes and cook for 3 to 5 minutes until heated through, stirring occasionally. Serve each portion with a sprinkle of egg on top.
