Try our festive fruit mince slice with rich seasonal spices for a unique Christmas treat.
Ingredients:
  • 500.00 ml mixed dried fruit
  • 410g fruit mince
  • 150g butter, chopped
  • 90.00 gm firmly-packed brown sugar
  • 2 tsp finely-grated orange rind
  • 42.00 gm orange juice
  • 125.00 ml brandy
  • 2 eggs, lightly beaten
  • 250.00 ml plain flour, sifted
  • 37.50 gm self-raising flour, sifted
  • 125g pecans
  • 40.00 ml apricot jam
Instructions:
  • In a saucepan over medium heat, mix together dried fruit, fruit mince, butter, sugar, orange rind, juice, and 1/3 cup brandy. Stir and cook for 3 to 5 minutes until the sugar dissolves. Transfer the mixture to a large bowl and let it cool to room temperature.
  • Preheat your oven to 150°C. Grease a 4cm-deep, 19cm x 29cm slice pan, line it with baking paper, leaving a 2cm overhang on both long ends.
  • Combine eggs and flour with the dried fruit mixture, ensuring everything is well mixed. Spread the mixture evenly on the prepared pan, sprinkle nuts on top, and bake for 45 minutes or until a skewer inserted in the center comes out clean.
  • In a heatproof, microwave-safe bowl, gently mix the jam and the remaining brandy. Microwave on medium-high (70%) for 30 seconds or until the jam melts. Brush the top of the cake with the jam, cover it with foil, and let it cool in the pan overnight in a cool, dark place. Cut into pieces and serve.
