Overnight Christmas breakfast casserole - Prep the night before, simple & delicious!
Ingredients:
  • 1 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 0.5 cup butter, melted
  • 3 apples - peeled, cored and sliced
  • 0.5 cup raisins
  • 1 (1 pound) loaf French baguette, cut into 1 inch slices
  • 6 eggs, lightly beaten
  • 1.5 cups milk
  • 1 tablespoon vanilla extract
  • 2 teaspoons ground cinnamon
Instructions:
  • Prepare a 9x13 inch baking dish by greasing it. In a large bowl, combine brown sugar and 1 teaspoon of cinnamon. Add melted butter and mix well. Toss in apples and raisins until they are coated evenly. Transfer the mixture into the prepared baking dish. Arrange bread slices in a single layer over the apple mixture.
  • Whisk eggs, milk, vanilla, and 2 tsp cinnamon in a bowl. Pour mixture over bread, ensuring each slice is fully soaked. Cover with foil and refrigerate overnight.
  • Preheat your oven to 375 degrees F (190 degrees C). Take the dish out of the refrigerator as the oven heats up. Bake the dish covered for 40 minutes, then uncover and bake for an additional 5 minutes. Allow it to rest for 5 minutes before serving.
