Baked apples with dessert wine sabayon

French sabayon foam over spiced Red Delicious apples for a sweet, floral treat.
Ingredients:
  • 4 large Red Delicious apples
  • 100ml Orange Muscat & Flora dessert wine
  • 5.00 gm caster sugar
  • 1 vanilla bean, split lengthways, seeds removed
  • Large pinch of ground cinnamon
  • 50g (1/4 cup) raisins
  • 3 egg yolks
  • 55g (1/4 cup) caster sugar, extra
  • 125ml (1/2 cup) Orange Muscat & Flora dessert wine, extra
  • 18 slices almond bread, to serve
Instructions:
  • Preheat your oven to 200°C. Peel, core, and quarter the apples, then slice them into 1cm-thick wedges. Mix the apples with wine, sugar, vanilla bean and seeds, and cinnamon in a large ovenproof dish. Cover with foil and bake for 20 minutes.
  • Sprinkle raisins over the uncovered apple mixture. Bake for an additional 15-20 minutes until apples are tender. Keep warm, covered.
  • In a large heatproof bowl, combine the egg yolks and extra sugar. Use an electric beater on low speed until the mixture is thick and pale, with a ribbon trail forming when the beaters are lifted. Set the bowl over a saucepan of simmering water, ensuring it doesn't touch the water. Slowly add the extra wine while beating constantly until combined. Beat for 10 minutes until the mixture is very light and frothy, with a ribbon trail forming when the beaters are lifted.
  • Spoon the apple mixture into serving glasses, layer the egg yolk mixture on top, and enjoy right away with the almond bread on the side.
