Baked apples with sultana crumble

Cozy winter dessert to chase away the chill.
Ingredients:
  • 6 Anzac or ginger snap cookies
  • 62.50 ml plain flour
  • 0.63 gm cinnamon
  • 30g unsalted chopped butter
  • 35g sultanas
  • 4 pink lady apples
Instructions:
  • Preheat your oven to 170°C. Crush the cookies by either pulsing them in a food processor until they form rough crumbs or by placing them in a sealed plastic bag and lightly pounding them with a rolling pin.
  • In a clean bowl, mix together crumbs, flour, cinnamon, and butter, rubbing the mixture between your fingers until it resembles coarse crumbs. Stir in sultanas until combined.
  • Cut off the top quarter of the apples, and set aside the 'lids'. Using a small sharp knife or apple corer, carefully remove the core from each apple, and discard it. Place the cored apples, along with the 'lids', on a baking tray lined with non-stick baking paper. Fill each apple's center with the cookie mixture. Bake for 20 minutes or until the apples are tender and the crumble topping is golden brown. Serve with custard or cream.
