Apple and sultana scrolls

Enjoy warm apple and sultana pastries with a scoop of ice cream for the perfect treat.
Ingredients:
  • Melted butter, to grease
  • 300g (2 cups) self-raising flour
  • 100g (1/2 cup) caster sugar
  • 0.63 gm mixed spice
  • 60g chilled butter, cubed
  • 125ml (1/2 cup) milk
  • 65g (1/3 cup) sultanas
  • Plain flour, to dust
  • 1 large (about 200g) granny smith apple, peeled, cored, coarsely grated
  • 45g (1/4 cup) icing sugar mixture
  • 10.00 gm cocoa powder
  • 20.60 gm milk
Instructions:
  • Preheat your oven to 200°C, then gently brush a baking tray with melted butter to coat it lightly.
  • In a large bowl, combine flour, sugar, and mixed spice. Add butter and use your fingers to rub it in until the mixture looks like fine breadcrumbs. Create a well in the center and pour in the milk and sultanas. Use a round-bladed knife in a cutting motion to mix until well combined and the dough just comes together. Transfer the dough to a lightly floured surface and knead gently for 2 minutes until smooth.
  • Roll out the dough into a 25 x 30cm rectangle using a lightly floured rolling pin. Sprinkle the dough with apple, then roll it into a log starting from the long side. Trim the ends, and cut the log into twelve 2cm thick slices. Arrange the slices cut-side up on the prepared tray.
  • Bake in the oven until golden and cooked through, about 30 minutes. Remove and transfer to a wire rack. Let it cool for 10 minutes before serving.
  • For the chocolate icing, mix icing sugar and cocoa powder in a small bowl. Pour in the milk and stir until smooth and well-combined.
  • Finish off the scrolls by generously drizzling them with luscious chocolate icing before serving right away.
