Apple and sultana cake with cinnamon frosting, perfect for a cozy snack with tea and a magazine.
Ingredients:
  • 125g butter, chopped
  • 161.25 gm raw or caster sugar
  • 300.00 gm self-raising flour, sifted
  • 2 eggs, beaten
  • 1 lemon, rind finely grated
  • 170.00 gm sultanas
  • 262.50 gm apple juice
  • 1 apple, grated
  • 150.00 gm pure icing sugar, sifted
  • 0.63 gm ground cinnamon
  • 21.00 gm lemon juice
Instructions:
  • Preheat the oven to a toasty 180°C. Prepare a loaf pan by greasing and lining it with baking paper, leaving a 2cm overhang on each long end.
  • In a saucepan, melt butter over medium heat, then transfer to a mixing bowl. Add sugar, flour, eggs, lemon rind, sultanas, apple juice, and apple. Mix thoroughly until combined. Spread mixture evenly into a pan.
  • Bake for 50 to 60 minutes until a skewer inserted in the center comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  • Prepare the icing by mixing icing sugar and cinnamon in a microwave-safe bowl. Stir in lemon juice until a thick paste forms. Microwave on HIGH for 40 to 50 seconds, or until the icing has a runny consistency.
  • Drizzle icing generously over the cake and gently spread it out to ensure full coverage. Let the icing set before indulging in this delicious treat.
